Baked Apple Pudding with Rum Sauce

Baked Apple Pudding with Rum Sauce
1 cup flour
1 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg (optional)
pinch salt
1/4 cup margarine
1 cup sugar
1 egg
2 large apples, no need to peel
Method
Grease an 8 x 8 inch pan. Mix first five ingredients. Cream margarine with egg and sugar. Add flour, beat till light. Grate apples into flour mixture and mix. Pour into pan. Bake at 350 for 1/2 hour.

Rum Sauce
1/2 cup margarine
1 cup sugar
1/2 cup light cream
1 tsp vanilla
2 or more Tbsp Rum
Cook margarine, sugar and cream together, stirring all the time until thickened, about 15 minutes. Add vanilla and rum.
This recipe was given to me by a friend (Pepper Little) in Phoenix, Arizona. I believe it has been in her family for a long time. We certainly enjoyed it!
