Make Your Own Spice Mixes

Make Your Own Spice Mixes:

FIVE SPICE POWDER
1 tsp. Ground cinnamon
1 tsp. Ground cloves
1 tsp. Fennel seed
1 tsp. Star anise
1 tsp. Szechwan peppercorns

ITALIAN HERB SEASONING
1 tsp. Oregano
1 tsp. Marjoram
1 tsp. Thyme
1 tsp. Basil
1 tsp. Rosemary
1 tsp. Sage

CINNAMON SUGAR
7/8 cup Granulated sugar
2 Tbsp. Ground cinnamon

TAMARIND PASTE
1 tsp. Dates
1 tsp. Prunes
1 tsp. Dried apricots
1 tsp. Lemon juice

CHILI POWDER
3 Tbsp. paprika
1 Tbsp. ground cumin
2 Tbsp. oregano
1 tsp. red or cayenne pepper
1/2 tsp. garlic powder
 
I have my favorite spices also.

It is called, "spice mixed". I just learned this one too!

18 grams chicken stock (chicken powder)
15 grams sugar
11 grams nutmeg
7 grams salt
3 grams powdered black pepper.

This spice mixed really works great with any white sauces. :)
 
A couple of my favorites are:

Magic Dust Spice

This can be used as a meat rub or as a seasoning. It is good in most everything you want to add zing too.

1/2 cup paprika
1/4 cup kosher salt, finely ground
1/4 cup sugar
2 Tbs mustard powder
1/4 cup chili powder
1/4 cup ground cumin
2 Tbs pepper
1/4 cup garlic powder
2 Tbs cayenne

1. Mix well and store in tightly covered container.

Author Notes
Champion BBQ pitmaster and restauranteur Mike Mills came up with this spice mix that he calls Magic Dust. It can be used on any type of food, barbecued or not.
To make it a little more hot and spicy, increase the mustard powder and black pepper to 1/4 cup each.

Salt Substitute

It uses kelp, which has trace amounts of sodium chloride, much less than table salt.

3 Tbs dried basil
2 Tbs dried savory
2 Tbs celery seed
1 1/2 Tbsp dried sage
1 Tbs dried thyme
1 tsp powdered kelp (obtained at most health food stores)
1 Tbs dried marjoram

1. Powder the herbs in a grinder or blender.

2. Store in air tight container away from heat and light.

3. Use in soups, stews, eggs, meats, any recipes to replace salt.
