1/2 cup butter
1/4 cup brown sugar
1 egg, separated
1/2 teaspoon pure vanilla extract
1 cup flour
1/4 teaspoon salt
Mix it butter, brown sugar, egg yolk and vanilla thoroughly. Add Flour and Salt. Roll into 1" Balls; dip in slightly beaten egg white; roll in finely chopped pecans. Place 1 inch apart on ungreased cookie sheet. Bake for 5 minutes at 375°. Remove cookies from oven and pressed down gently in center of each cookie. Return to oven and bake for eight minutes at 375°. Let cool and fill center with any icing you prefer.
