1 cup buttermilk
1 cup quick cooking oats
1/4 cup raisins
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
2 - 3 tbsp oat bran
1/2 cup chopped walnuts
2 egg whites
1/4 cup light brown sugar
1/4 cup canola oil
1 tbsp honey
1 cup quick cooking oats

1/4 cup canola oil
1 tbsp honey
- Combine the buttermilk, oats, and raisins in a ceramic bowl and let stand a 1/2 hour.
- Preheat oven to 400 degrees F.
- Combine the flour, baking powder, baking soda, and oat bran.
- In an large mixing bowl mix the egg whites, sugar, canola oil, and honey together.
- Add the flour and oats mixture alternately to the flour mix, and stir between additions.
- Fold in the chopped walnuts,
- Pour the batter into 12 well greased muffin cups.
- Bake for 25 minutes.
