My family isn't sick of apple butter yet!
This was a great variation on the traditional sweet potato casserole. It was sweet but not too sweet and everyone loved it. Next time though I will make two changes. The first is that I will use sweet potatoes because I prefer their stringy texture. The second is that I would mix about 1/2 cup chopped pecans in with the topping.
Ingredients
* 4 medium sized yams
* 1 cup apple butter
* 1/2 cup brown sugar
* 1/3 cup flour
* 3 tablespoons softened butter
Directions
1. Boil yams in skins for 25-30 minutes, until easily pierced with a fork.
2. Preheat oven to 375 degrees. Grease casserole dish.
3. Run yams under cold water until cool enough to peel. After peeling cut into 1/4-1/2 inch slices.
4. In a bowl toss yams with apple butter until well coated. Spoon into prepared dish.
5. In a separate bowl combine the brown sugar, flour, and butter until crumbly. Sprinkle over yams.
6. Bake uncovered 25-30 minutes or until topping is golden brown.
