Ingredients:
3 pounds Golden Delicious apples, peeled, cored and sliced
1/2 C plus 3 tbls. sugar
1/2 C golden raisins
grated zest of one lemon
10 tbls. butter, melted
1 loaf of sandwich bread, crusts removed.
1/2 tsp. cinnamon
Confectioners' sugar to garnish
Directions:
Combine apples, 1/2 C sugar, raisins and lemon zest and juice in a heavy saucepan. Cover and cook over low heat for 8 to 10 minutes, shaking pan occasionally, until apples are very tender and beginning to fall apart.
Preheat oven to 375 degrees. Brush inside of springform pan with some of the melted butter. Remove crusts from bread and brush both sides of each bread slice with butter. Mix together remaining 3 tbls. of sugar with cinnamon and sprinkle over one side of bread slices.
Place about 3 slices of bread, sugared side down, in bottom of pan, trimming to fit. Cut about 8 slices in half and slightly overlap them, sugared side out, to line sides of pan.
Spoon apple mixture into bread shell. Cover with remaining bread slices, sugared side up, trimming to fit as necessary. Fold over bread slices around sides of pan to slightly overlap top of charlotte - Bake 30 to 35 minutes or until crisp and golden brown. Let stand in pan for 5 minutes, then remove sides of pan. Sprinkle with confectioners' sugar. Serve warm.
This dessert was named for Queen Charlotte and is "royally" good!!
