Ingredients:
For Muffins:
1 3/4 C tinned apple pie filling
1 3/4 C all-purpose flour
1 1/4 C whole-wheat flour
1 pkg. heat and serve vanilla pudding mix
1/2 C firmly packed light brown sugar
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 C milk
1/3 C vegetable oil
2 egg whites
For Topping:
1 1/2 tsp. granulated sugar
1/2 tsp. cinnamon
Directions:
Preheat oven to 350 degrees. Line 16 muffin cups with paper liners. Place the pie filling in a small bowl. Cut any large apple pieces into 1/2-inch chunks.
For the muffins, combine the all-purpose and whole-wheat flours, the pudding mix, brown sugar, baking powder, cinnamon and salt in a large bowl. Mix well.
Combine 1 1/4 C apple filling, the milk, oil and egg whites in another large bowl. Mix well. Add the flour mixture to the fruit mixture. Stir until just combined.
Divide the batter evenly among the prepared muffin cups. For the topping, combine the sugar and cinnamon in a small bowl. Spoon the remaining apple filling over the batter in the muffin cups. Sprinkle evenly with the sugar mixture.
Bake until the muffins are golden brown, about 25 minutes. Cool in the muffin cups on a wire rack for 10 minutes. Serve warm. Absolutely delicious!!
