My husband's Dad has all of these greens coming back up from the stems from last fall in his garden. I don't like to cook the ones like that because they are tough and flavorless in my opinion. Soo... a few weeks ago he asks me to pick some of the greens and cook for Sunday dinner. So I say ok and go out to the garden and chop all of the weeds from my herb patch and kill a little time. Then I go back inside and tell him I got some for dinner.
On the way home I stop by the store and pick up two large cans of Bush's Best whole leaf spinach in the can. I drain them before we leave for his place on Sunday and pop them in a skillet with a little extra virgin olive oil and minced garlic. Season with a little salt and pepper and heat them up for about 15 minutes. I took them to have with the rest of our dinner.
Now here is where it gets funny. He has not stopped talking about how delish those greens were. He also hasnt put together that they were spinach but he didnt have any spinach greens in the garden. We were down there a few days ago and he asked me how long I cooked the greens because he had cooked some he had picked and they didnt quiet turn out as good as mine
Jon was trying not to laugh out loud and bust me.
Personally I dont care from canned greens at all. They are to mushy but evidently that is how he liked them.
