Banana Cake

Moist cake with nice banana flavor. Needs no icing.

1 cake
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3/4 cup shortening
2 1/4 cups sugar
3 eggs
6 tablespoons buttermilk
1 1/2 cups mashed bananas

Preheat oven to 350 degrees.
Sift dry ingredients together, set aside.
Cream shortening and sugar.
Add eggs and buttermilk to sugar mixture.
Combine dry ingredients into wet.
When incorporated, stir in mashed banana.
Pour batter into a greased, floured tube pan (angel food cake pan).
Bake 45-50 minutes, or until a toothpick inserted in center of cake comes out clean.
Cool slightly, run knife around edges of pan to loosen cake, remove cake from pan.
Finish cooling cake on a wire rack.
Slice into wedges.
 
Banana Bread

Your banana cake recipe looks so good. I didn't have a cake mix on hand so I just ended up making a banana bread to hold me over. My banana bread is a very basic recipe passed down through the family.

1 stick of butter, softened
1 cup of sugar
2 eggs
4 ripe bananas mashed
1 1/2 cups of flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1/2 teaspoon of vanilla
1/2 cup of chopped walnuts

Preheat the oven to 350*
In the mixer, cream the butter and sugar together. Beat in the eggs and then the mashed bananas. In another bowl, mix all the dry ingredients together and then mix the dry ingredients in with the wet in three stages mixing well. If using the mixer to incorporate the dry with the wet, make sure to scrape down the sides and bottom several times. I hate pouring out the batter and finding a big lump of dry mix on the bottom of the bowl.
My mother always baked her banana bread in a loaf pan and there were times after baking it the center would still be a bit raw. I bake mine in a Bunt Pan. It solves that problem and I don't have to worry about over baking it and having a dry banana bread. Bake in the Bunt pan for 50-55 minutes. If a skewer comes out clean it is done.
 
janie- this is the kind of cake that one doesn't even need a fork to eat! Just give me a pillow to lay against and a bib! Hee-Hee!
