Basic Potato Salad

Basic Potato Salad
2 pounds new potatoes
1/2 pound mushrooms
3 green onions
3 stalks celery
3 tablespoons vinegar
2 hard-boiled eggs
2 tablespoons Dijon mustard
1/4 cup mayonnaise
Salt, pepper
Cover potatoes in pan with cold water and bring to boil over high heat.
Cook until potatoes are tender. Meanwhile, thinly slice mushrooms,
onions and celery and combine in mixing bowl. When potatoes are tender,
drain and halve or quarter potatoes, depending on size and add to bowl.
Sprinkle with vinegar. Cover and refrigerate. When cool, chop eggs and
add to bowl.
Add mustard and mayonnaise, and season to taste with salt and pepper,
mixing everything together gently.
 
Sounds good, Cookinghaus. I've never had potato salad with mushrooms, and that seems like a good addition.

Friend Wife makes a German-style potato salad we're partial too. It has no mayo, using a vinegar based sweet/sour dressing instead. And, of course, bacon.

If anyone wants it I'll post the recipe.
 
Here is my lazy day recipe.

Potato Salad (for two)

4 bacon strips
1 tablespoon cornstarch
1/3 cup sugar
1/2 cup water
1/4 cup vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1 16 oz can sliced potatoes
fresh parsley -- minced

In a skillet, cook bacon until crisp. Drain, reserving 2 Tablespoons of drippings.

Crumble bacon and set aside

Add cornstarch and sugar to drippings, stir until smooth. Add water, vinegar, salt and pepper; cook and stir over medium heat for 3-4 minutes or until thickened and bubbly.

Stir in potatoes and bacon. Cook for 2-3 minutes or until heated through. Serve warm or at room temperature.

Garnish with parsley.
 
And not to ignore the Sweet Potato....

Sweet Potato Salad

1 pound sweet potatoes -- baked
1/2 cup cooked green peas -- cold
1/2 cup crushed unsweetened pineapple
3 tablespoons chopped fresh parsley
1/3 cup favorite dressing
8 lettuce leaves (optional)

Peel and slice sweet potatoes and place in a small bowl. Add remaining ingredients; toss lightly. If desired, serve on lettuce leaves.
 
Creamy Potato Salad

6-8 Red potatoes med. to large
3-4 hard boiled eggs
6-8 radishes (optional)
1 tsp. salt
1 tsp celery seed (not salt)
1/2 cup mayonnaise
1/2 cup sour cream
2-3 scallions (green onions)
1 tsp. pepper
1/4 cup of dill pickle juice pour over sliced potatoes.
combine 1/2 cup of mayonnaise & 1/2 cup sour cream first and then mix in with potatoes etc. garnish with egg slices. Cookie :)
 
German Potato Salad

2-3 lbs cooked potatoes (slices or chunks), cooled
1 onion, chopped
3 thick slices bacon, larded
2 tbls bacon fat
1 tbls flour
1 tbls parsley, chopped
1/3 cup sugar
1/3 cup white vinegar
2/3 cup water
Salt & pepper to taste

Mix potatoes with half the onion and the parsley.

Mix together the sugar, vinegar and water. Set aside.

Cook larded bacon in a skillet until well browned. Drain on paper towels and set aside. Reserve 2 tbls bacon fat in pan. Add the other half of the onion and cook until soft. Add flour and blend well. Slowly add sugar/vinegar/water mixture. Bring to boil, stirring constantly, until thickened.

Add to potatoes, mixing well. Season with salt & pepper.

Serve hot or cold.
 
Very sweet potatoes

Maple Glazed sweet potatoes

2 1/2lbs or 3lbs potatoes
4T butter or margarine
1/2 C lite pancake syrup
4T brown sugar (light color)
miniature marshmallows
1t cinnamon
1/2 t nutmeg
1/2 t cloves
1) boil potatoes until soft and tender not mushy
2) cool potatoes then peel cut into 1/4 inch rounds
3) Make your mixture pf pancake syrup brown sugar cinnamon nutmeg & melted butter pour over potatoes.
4) put into crock pot and slow cook in crock pot.
you can also marinade cooked potatoes over night in pancake syrup. these are really good sweet potatoes. Top them off with mini marshmallows. Cookie :)
 
I love sweet potatoes in syrup Cookie, thanks for sharing. Boy I bet these would be tasty if you used real Maple Syrup!!! I am going to try that this Thanksgiving!
