A friend swears by this sauce- says it's great on chciken, pork and salmon...
In a food processor or blender, combine 1 1/4 cups rinsed blackberries (you can also use frozen blackberries), 1/4 cup each ketchup,honey,firmly packed brown sugar, and minced fresh ginger; 1 tsp pepper, and 1/2 tsp salt (optional). Whirl until berries are pureed. Add 1-2 tsp hot sauce to taste. Pour into a 1-quart glass bowl. Cover loosely with plastic wrap, cutting a few vents for steam. Cook in a microwave oven, stirring occasionally, for about 8 minutes.
I usually double this recipe for 2 racks of Pork Spareribs. I cook it in the microwave for 4 minutes, stir, and then cook another 4 minutes. We practically lick it off our plates!!
