Ingredients
2 pounds Boneless Loin Roast
3 tablespoons paprika
1/2 teaspoon cayenne pepper
1 tablespoon garlic powder
2 teaspoons oregano
2 teaspoons thyme
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1/2 teaspoon cumin
1/4 teaspoon nutmeg
1. Preheat oven to 350°F. Combine seasonings in a small bowl. Rub over all the roast. Place roast in shallow pan.
2. Bake roast about 1 hour or until done (internal temp 155°F). Remove from oven; let rest 5 to 10 minutes before slicing.
