Ingredients:
3/4 C plus 1/4 C water
1 pkg. dry yeast
1 tsp. sugar
1/4 C plus 2 1/2 C grated fresh parmesan cheese
2 1/2 C all-purpose flour
1 tsp. salt
1 tsp. garlic powder
1 tsp. plus 3 tsp. Italian herb seasoning - dried
2 tbls. olive oil
Directions:
Preheat oven to 375 degrees.
Dissolve the yeast and sugar in 3/4 C water (heated to medium heat). Let sit for 10 minutes. Mix 1/4 C cheese, flour, salt, garlic powder and 1 tsp. Italian herb seasoning in a large bowl. Stir the yeast mixture into the flour mixture plus enough of the 1/4 C water to make a slightly sticky dough. Form the dough into a ball and place into a greased bowl. Turn the dough over to grease the top, also. Cover and set in a warm place to rise until doubled - about 45 minutes to 1 hour. Roll or pat out on a floured surface to a 12-inch round and place on a greased cookie sheet. Cover and let rise 12 minutes. Brush the top with olive oil. Bake for 20 minutes. Mix the 2 1/2 C cheese with the 3 or more (to taste) tsp. of Italian herb seasoning and spread the mixture on the baked focaccia. Place under a broiler until the cheese bubbles. This bread will melt in your mouth! Enjoy!
