Chicken Squares
(2) 8oz tubes of cresent rolls
8oz cream cheese - softened
2 Tbsp melted butter/margerine
3-4 C cooked & chopped small chicken breast (I boiled 2 breast halves)
Salt & Pepper - a couple health shakes from the shakers
2 Tbsp Milk
1 Tbsp chives (I didn't have any so I used finely chopped onion)
Mix the cheese, butter, milk, chives, and S&P until creamy with mixer. Add chicken & fold together. Open rolls & create 8 squares. Divide mixture among the squares. Fold up corners & seal/pinch all openings.
Melt 1 Tbsp butter & crush 3/4 C Croutons. Brush the tops of each "packet" with butter & top with crushed croutons.
Bake at 350 for 25-28 minutes until golden brown.
I only made 4 last night & refrigerated the rest of the filling to make later this weekend. Much better served & eaten fresh made so you have that nice crisp texture of the roll. I served it with mashed potatoes, vegetable, & apple sauce.....YUM! Looks very nice on the plate.
