Ingredients
Cake
1 cup Guiness beer
3/4 cup sour cream
1 stick, plus 2 tablespoons butter
2 eggs
3/4 cup unsweetened cocoa
1 tbsp vanilla extract
2 cups sugar
2 1/2 tsp baking soda
2 cups flour
Icing
8 oz cream cheese, softened
4 oz butter, softened
1/2-3/4 cup milk or heavy cream
3 cups powdered sugar
Directions
Preheat oven to 350F and butter a 9 inch springform pan.
Pour the Guinness into a arge wide saucepan, add the butter-in slices-heat until the butter is melted, then whisk in the cocoa and sugar.
In a separate bowl beat the sour cream with the eggs and vanilla and pour into the brown, buttery, beery pan and finally whisk in the flour and baking soda.
Pour the batter into the greased and lined pan and bake for 45 minutes to an hour. Do not overcook!! Leave to cool completely in the pan on a cooling rack, as it is quite and damp cake.
For frosting: Blend the cream cheese and butter together until smooth and creamy. Add milk and powdered sugar. You may need to used more or less milk and powdered sugar for desired consistancy.
When the cake is completely cool, remove from pan. Two methods to frosting the cake. Either leave the cake whole and ice the tops and sides, or cut into two layers, ice inbetween, then tops and sides. Your choice.
