I want to make a coffee cake today but am out of eggs and will not be able to get to the grocer til tomorrow. How do I do this with no eggs? Or do I just need to wait til tomorrow?
Yup. I don't often fry foods but I just can't see messing up catfish by making those 'healthy' recipes. I've finally figured out how to keep the batter from falling off when the fish first hit the skillet.
My next door neighbor is disabled and can't cook meals so I've gotten to where I cook whatever she is wanting and she supplies the main part of the meal be it meat or whatever. So she supplied last night's catfish and I contributed the slaw and hushpuppies (with her cornmeal). Hushpuppies can't be prepared any other way than frying either so that's my limit on violations for the food police for a while.
While I was preparing all of that, her daughter came in from the grocery trip she had made for her and brought in T-Bones and more fish. I do hope she waits a bit before she wants that fish. If she does, I'll just fix some for her and I'll eat a salad or something. I'll do the T-Bones under the broiler.
I've eaten more meat since I've been making her meals than I have in years. I usually like to stick with chicken, seafood and vegetables, salads and other alternatives.
