1 egg
3 tblsp cider vinegar
3 tblsp sugar (I use 4 because I am a sweet freak!)
3 tblsp finely chopped onions
3 tblsp finely chopped green pepper
3 tblsp chopped pimentos
1 8oz pkg cream cheese
salt & pepper to taste (I use very little)
I found it best to get as much liquid out of the chopped ingredients as possible, so I use a paper towel to do this.
Put egg, vinegar, sugar, in double boiler, mix well, cook over low heat, stirring constantly until mixture thickens. Remove from heat, stir in cream cheese and mix until smooth. Add remaining ingredients, mix well and refridgerate. Serve with raw cauliflower or your choice of veggies. I love this with potato chips. A little tricky, but it is good on salty chips.
