Country Apple Fritters
1 beaten egg
1 cup milk
1 cup finely chopped apples...suggest Johnathans
These are delicious if you are not counting calories. The orange in this recipe adds something special to the flavor.
1/4 cup sugar
1/4 t. salt
1 t. grated orange peel
3 T. orange juice
2 t. vanilla
2 cups flour
1 T. baking powder
Vegetable oil for frying
sifted confectioner's sugar
In mixing bowl, combine beaten egg, milk, chopped apple, sugar, salt, orange peel, juice and vanilla. Stir together flour and backing powder; fold into egg/apple mixture, stirring just until all flour is moistened. Drop batter by rounded teaspoon into hot oil (350 degrees). Fry until deep golden brown, about 3-4 minutes, turning once. Drain fritters thououghly on paper towels. Roll in sugar or sift sugar over tops. Serves about 40 fritters.
