1 - 3/4 pound Pork Tenderloin
1/2 tsp grated lime zest
2 tbs lime juice
2 tbs chopped cilantro (fresh coriander)
1 tbs packed brown sugar
1 tbs vegetable oil
2 tsp curry powder
1/4 tsp salt
Pinch of pepper
1 large sweet yellow bell pepper
1. Put 4 wood skewers in water to soak. Cut pork into 1-1/2" cubes. Place in bowl.
2. Whisk together lime zest and juice, cilantro, sugar oil, curry powder, salt and pepper. Add to bowl and toss to coat. Cover and marinate at room temperature while you prepare other parts of meal and heat grill.
Cut yellow pepper into chunks about the same size as the pork cubes.
Reserving any marinade, alternately thread pork and yellow pepper onto each of 4 soaked wooden skewers.
Place on a greased grill over medium heat. Cook turning occasionally and basting with reserved marinade for 15 minutes or just until the pork is no longer pink inside. Makes 2 servings. Preparation time is about 30 minutes.
PS: I don't use cilantro as I can't stand the stuff and I use a hot curry powder which gives a nice spicy bite.
