What are some you your easiest recipes for dinner? I am a challanged cooker and need ideas.

My suggestions for easy recipes are:

1. Macaroni and Cheese (20 minutes)
2. Pan fried frozen catfish filets (15 minutes)
3. Sloppy Joes (25 minutes)
4. Chili made with French's Chili-O (25 minutes)
5. Spaghetti Sauce and pasta (40 minutes)

Easy fresh vegetables:
1. Steamed Asparagus with a lemon butter sauce (10 minutes)
2. Green beans (10 minutes)
3. Mashed potatoes (25 minutes)
4. Brussel Sprouts (just kidding)

Panini - 15 - 20 minutes

Penne pasta in oil with sundried tomatoes and marinated artichokes - 25 minutes - including making a green salad

Macaroni in oil with garlic - 25 minutes including making a green salad

Antipasto - assorted greens, tomatoes, radishes, cukes, cheeses, ham, salami, olives, egg, celery, carrots, etc. - 25 minutes (due to all the slicing and chopping)

Club sandwiches and BLT's - 15 to 25 minutes

Basic casseroles - 30 to 45 minutes

Italian sausage, peppers and onions - 30 - 45 minutes and boil corn on the cob at the same time

Sausage and kraut - 40 minutes

Oven baked fish and baked potato slices - 20 minutes

Macaroni and potato salad can be assembled in 30 - 45 minutes or less

And what's wrong with Brussel sprouts????? I love them (but my body doesn't! LOL) that's why I call them "killer cabbage balls from outer space"

:p

Chilimac is really easy as well. Just drop in a can of your favorite chili after mixing your mac and cheese.

Beef stroganoff.

Brown a pound of ground beef (or turkey) with some chopped onion. Add some thyme, oregano and marjoram, a can of cream of mushroom soup and half a can of water. Bring to a simmer. Just before serving, add a tablespoon or two of sour cream. Serve over rice or egg noodles.

I also often keep taco meat around. Just brown some ground beef or turkey and follow the directions on the taco seasoning packet. That should be enough for 2-3 meals. With it you can make:

Quesadillas
Taco salad
Nachos

My fastest things are quesadillas (just top tortillas with cheese, beans, chicken, beef, whatever and cook in pan until melted and good) and apricot chicken. For the chicken I just mix a jar of apricot jam with a couple of T of mustard and a couple T of water, and some rosemary. Then I pour that over some chicken breasts or thighs, cook in a baking dish at 350 until done, and serve over rice.

taco
taco salad
spaghetti
chicken & cheese quesadillas or black bean & rice quesadillas
Grilled Chicken salads
Toasted Panini sandwiches

chicken tortilla soup. sounds complicated, but it's just opening a bunch of canned veggies and beans and putting them in a stockpot with diced chicken and rice, then serving up with sour cream, salsa, and tortilla chips. Excellent leftovers, too.

That sounds almost like taco soup:

1 can rotel
1 can black or pinto beans
1 can corn
1 pound browned ground beef
1 envelope taco seasoning
1 envelope ranch dressing mix

Serve with cornbread.

Yep, taco soup but with rice and diced chicken instead of ground beef and ranch dressing. shhh! my husband thinks it's a separate dish from taco soup, so I can make them both in one week and he won't complain that I'm serving him a duplicate meal. ;)

If you are a Mac & Cheese lover, try some of these ideas:

PREPARED MAC AND CHEESE ADD ONS:

Add each set of suggestions to a prepared box of macaroni and cheese--

cooked/diced chicken + broccoli + 2 t. mustard

cooked ground beef + stewed tomatoes + 1 t. chili powder

cooked ground beef + green pepper + 1/2 c. barbecue sauce

cooked/diced chicken + stewed tomatoes + 1/3 c. green pepper

ham + peas + 1 t. mustard

Italian sausage + broccoli + 1/4 c. red pepper

Grated cheese (in addition to that which is in it)

Hehe. That sounds like our house; sometimes I get a comment about how some dish is similar to another, but yet they actually are different.

And who can forget the classic mac and cheese add-on: cut up hot dogs.

Kid food, yes, but sometimes we just need to rediscover our roots. :D

I think that steamed snow crabs legs and corn on the cob are quite easy to make. And if they're on sale, the snow crab legs are quite cheap. I serve teh crab legs with a little melted butter and a dash of lemon juice.

One of my favorite easy things to make is quesadillas.

Just brown some ground beef and add taco seasoning according to the package directions.

Place a tortilla on a skillet or griddle, sprinkle some cheese on, and then some taco meat. Add a little more cheese, then another tortilla.

Cook until starting to brown on the bottom, then flip it over and do the other side.

YUM

I like to add beans to my quesadillas, but basically, they are the same.

Yeah, beans are good too, that way you get some fiber and more protein.

I don't like beans, come to think of it, I don't like a lot of things. As for Mac and Cheese, I actually like the instant kind better than homemade.

Thanks for all of the ideas. The crab sounds great. I love sea food. I am assuming you would boil it?

Also I like to rub cumin over a chicken breast and throw it on the grill. It seals in the juices nicely, and you can steam some veggies to go with it and you're all set.
