1/2 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon garlic powder
2 tablespoons butter
1 lb. calves liver, rinsed
1 1/2 cup water mixed with 1/2 teaspoon salt
1 onion, sliced, separated into rings
2 tablespoons flour stirred into 1/2 cup cold water
Make seasoned flour by stirring together the flour, salt, pepper and garlic powder, set aside.
Melt butter in a skillet, coat the liver with the seasoned flour, then brown on both sides, medium heat.
Pour the salted water down the side of the skillet, place onion on top. Bring to boil, reduce heat and simmer covered 30 min.
Remove the liver, bring the liquid in the pan to a boil. Stir in the flour and water mixture. Cook and stir until thick. Add salt and pepper to taste. Return the liver to the skillet.
