Garlic and Parmesan Chicken Breast Bake

Not long ago I had no idea what to make for dinner so I just threw a bunch of stuff together in the oven. Now we all like this and I can even get my picky picky eater of a four year old to eat this. She of course prefers to dip it in ketchup.

Preheat your oven to 475.

Take an oven safe baking dish or sheet and cover it with tin foil.

Then I take 4 boneless, skinless chicken breasts and arrange them with some space in between. You can thaw them out, but I don't even thaw them entirely.

I sprinkle parmesan cheese all over the chicken breasts until they are mostly covered with very little pink showing through.

We have a large jar of pre-minced garlic and I spread a little bit of that across the top of each piece.

Generally it will bake for about 20-30 minutes. I *always* cut open each chicken breast at the thickest part to ensure it is cooked thoroughly.

You can even filet the breasts again so that they are not so thick. It goes great with some rather plain pasta like buttered noodles or plain couscous.

The pre-minced garlic is great. Somehow is adds more garlic flavor than when I do it from fresh garlic. I don't quite understand that since fresh is fresh. Maybe it's because of the fine mincing that I can't do. For whatever reason, my taste buds prefer the prepared minced garlic and since I've tried the bottled minced garlic, I haven't bought a garlic bulb.
 
I have to wonder if mincing it somehow produces the "juice" in the containers, or at best, adds more to the juice. Then maybe the juice remarinades the garlic pieces so to speak adding more flavor back in. I'm just hypothesizing though. : )

What's great about thsoe containers is you can even buy them at CostCo. We bought a giant container and just keep it in the fridge because we use a lot of garlic in our house. Definitely a money saver, too, rather than buying heads of garlic all the time.
 
Oops, I have to confess, I didn't end up making this. No one else in the house thought it sounded good so tomorrow night it is. Instead we all ate separately. I had a peanut butter and jelly sandwich and a giant bowl of chocolate chip ice cream. Who says that being an adult means you can't eat like a five year old? :)
 
I promise, no cheating tonight! My chicken has already thawed so I *must* use it. The glassware I use to make it in is clean so I can't use that as an excess either. Besides, it sounds really tasty. I think I'll make up some nice whole wheat pasta to go with it tonight.
 
Tomato and Cucumber Salad

You know what would go good with the chicken is tomatoes and cucumber salad. This is easy to make, and since summer is here, it's time to eat tomatoes!

To make this salad peel, then cut a cucumber in slices. If you have a large cucumber, cut the cucumber in half lengthwise before slicing. Then remove the top core from large tomatoes, and cut in half, and then again into quarters. Dice up some onion. To make a serving, place some of the cucumbers in a salad bowl, top with the tomatoes, and then the onions. Then add a little Italian salad dressing. If you want to add fiber to your diet you can add some chick peas (aka garbonzo beans).

This is real great salad when made with garden fresh cucumbers, and tomatoes.

You're bad!! Cereal for dinner. That's cheating.

Hah, cheating? Somedays I'm too tired after a day's work I eat ice cream with Kellog's frosties and some chocolate syrup for dinner. Then again for breakfast the following day. Yum! :D
 
But I do cook some "real" meals too, though. I was experimenting the other night and created my "masterpiece"--Soy asparagus, with fried tofu and nuts. It may seem weird but it's delish. :)
 
Ooo, soy asparagus? That sounds very good. I'm not always up for asparagus but if it's done right I've found that I actually enjoy it. I'm the goof that of course eats from the bottom up and doesn't like the top part.
 
From the bottom up? Heheh, that is weird. :) I actually take off like, an inch from the bottom of the ones I buy. The tips are the prize.
 
I love asparagus!

I really love asparagus but my wife drowns the asparagus in Cheddar cheese sauce. I really don't know why as asparagus is a real treat. It's funny how something one person enjoys isn't the same as anothers enjoy. Guess that's one of the odd things in life.
 
I agree oldbay. Just like about everything else people have different tastes in food. Among my closest friends I'm the only real veggie-lover. Growing up, my mother didn't have to hide them in my potatoes. :)

I bet I could even get my non-chicken lover of a husband to eat this. He's not fond of chicken at all. I've been making him eat it though because I told him that if he wants to lose weight he has to cut down on the red meat. We used to have beef of some sort 4 or 5 nights a week. Now I've gotten it down to beef only twice a week. And he hates it, LOL.
 
I could not imagine not eating chicken!! :eek: I am always in the mood to eat it!
 
My husband is weird though... We actually went over 6 months without eating chicken; just pork and beef. God I was dying for a piece of chicken. :eek: He finally said that he wanted to lose weight & the first thing out of my mouth was, "You are going to have to start eating more chicken then." He gave me a funny look but said that he would try... And I have to congratulate him, he's doing pretty good with the chicken.
