Ingredients:
2 C all-purpose flour
1/2 C granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/4 tsp. ground nutmeg
1/2 C chopped pecans
2 large eggs
1/2 C orange juice
1/4 C milk
2 tsp. grated orange zest
1/3 C plus 1 tsp. butter divided
1 C chopped fresh or frozen strawberries plus
3 whole berries divided
3/4 C confectioners' sugar
Directions:
Preheat oven to 350 degrees. Grease and flour a 9X5-inch loaf pan.
Combine the flour, granulated sugar, baking powder, salt, baking soda
and nutmeg in a large bowl. Stir in the pecans. Set aside.
Place the eggs, orange juice, milk and orange zest in a medium bowl. Mix well. Melt 1/2 C butter. Stir the melted butter into the egg mixture. Stir the egg mixture into the flour mixture until just moistened. Gently fold in the chopped strawberries. Spread the batter in the prepared loaf pan.
Bake until a toothpick inserted in the center of the loaf comes out clean, 50 to 55 minutes. Cool the pan on a wire rack for 10 minutes. Insert the bread onto the wire rack to cool completely.
Press the remaining whole strawberries through a fine mesh sieve to make 1 tbls. strawberry juice. Combine the confectioners' sugar, 1 to 2 tsp. warm water, the remaining butter and 1 tbls. strawberry juice until smooth and creamy. Spoon the glaze into a small plastic sandwich bag with one corner cut off. Pipe the glaze onto the bread. This yummy bread will disappear quicker than you can see!! Delicious!
