GOLDEN RICE
2 cups cooked rice
2 cups Cheddar cheese -- shredded
3 cups grated carrots
2 eggs -- beaten
2/3 cup milk
1 tablespoon minced onion
1 teaspoon salt
1/4 teaspoon ground black pepper
Combine all ingredients, stirring well. Spoon into a greased 1 1/2-quart
casserole. Bake at 350 degrees F. for 1 hour or until set. Serves 6
