Well I had my first grease fire today. 
One of the things on my list to make for my brother was a blooming onion. I used to small of a pan to hold the grease and when I dropped in the onion about 2 tablespoons shot over the side and caught on fire. I grabbed the pot and set it in the sink. Put it out with salt and fired up a burner on the other side of the stove to finish the onion before the grease cooled down much. I of course poured out some of the oil before putting it back on a burner.
I had quiet the little mess to clean up when I was done but the onion came out beautiful. I made him a batch of dipping sauce to go with it. I think it is time to order myself a deep fryer and next time he wants an onion go with onion petals
