Grilled Veggies

I have been grilling alot of veggies on my indoor grill.
Jon's Dad has been giving me zucchini and a lot of different peppers. His Mama has yellow squash she has been generous with. I have been tossing them with olive oil, salt, pepper, herbs de provence and minced garlic before grilling. Does anyone have any recipes for dressings to go over grilled veggies? I have some but would love some others to try.

I use a homemade Italian dressing sometimes. Equal parts of oil, vinegar and Italian seasoning, marinate about 15 minutes and then roast. Depends upon what veggies I'm using as to how long they roast. I don't have an outside grill so I use the oven.

I forgot to add the sugar here as an ingredient.....usually use refined sugar equal part.
