How beautiful, and thank you for the Valentine's Day wishes! Hope everyone here has a Happy Valentine's Day!

For an appetizer I made stuffed mushroom caps. The stuffing was a crab meat/tiny shrimp mixture, with sauteed butter, chopped mushroom stems, green onion and a splash of tarragon vinegar & a few dashes of Weber's Mango Lime seafood seasoning and a small amount of stuffing bread crumbs. After placeing mounds of stuffing in each hollowed out mushroom cap I topped each stuffed mushroom with 1/2 slice bacon and I baked them about 5min.'s in 400° oven and finished them off in the broiler until the bacon on top was done. With the left over stuffing mixture I spread it onto slices of crusty french bread that I had drizzled olive oil onto the bottom of. After spreading the stuffing on top of each slice I placed 1 slice of bacon on top in a fluted pattern and then placed each onto an iron skillet which I popped into the oven on bottom shelf. I finished them off under the broiler until the bacon was done, I served each piece of piece of toast on an appetizer plate surrounded by the stuffed mushrooms! Totally delicious and the bread was fabulous! I could not make up my mind which I liked more the toast or the stuffed 'shrooms!:)

For dinner tonight it is a roast beef /potatoes w/ carrots and zuccini and broccoli and asparagus grilled. For desert strawberry shortcake!!! Happy Valentine's Day!

Wow Cathy- what a wonderful menu! Yum!

Normally this is the start of my weekend off. But here I sit at work filling-in for a newlywed co-worker who wanted of to take his new bride out to supper.

I got home from my night-shift this morning at 8:00AM and headed directly to bed. Got up again at 2:00PM, showered and fast-tracked back to work. I get off again at midnight.

On Thursday I baked heart-shaped chcolate chip cookies to take to my niece & nephew, and gave my sister and bro-in-law a pair of nice ribeye steaks for this weekend... my cats each got a couple bites of rich braunschweiger... When my Mom turns-in tonight while I'm gone, she'll find the small box of chocolate truffles I left on the bedside table in the guest bedroom for her. This year, that's pretty much the extent of my Valentine's holiday! :)

That is the sweetest!

We didnt do anything special. Saturday night we went to Walmart to get a few things and Jon got me a teddy bear and some chocolates. It was Sunday so I made dinner and we went to my father in laws. I smoked burgers, garlic and some loose ground chuck in the smoker to use in my hotdog sauce. I made hotdog sauce, smoked cheeseburgers with aged cheddar, hotdogs on the indoor grill, deviled eggs, coleslaw, roasted asparagus, onion rings and potato cakes. My father in law loves potato cakes lol. I made a big pan of bread pudding out of some left over yeast rolls. Bread pudding is one of Jon's favs.

We are supposed to get 8 inches of snow by tomorrow so I made lots of extra to leave with my fil. His idea of a good meal can be a can of cold beans straight out of the can and I do not like the idea of him eating like that. He gets so busy doing things for eveyone else he neglects to eat right occasionally.
