What are some of your favorite herbs and spices to use when you are cooking? What is their distinct flavors?
One of my favorites is parsley that has a couple of different kinds.Parsley has a peppery, fresh flavor. The flavor of flat leaf parsley is stronger than that of curly leaf parsley. Parsley is generally used fresh as a flavoring or garnish.
Do you have a special recipe that uses the herb or spice you like?

I think there is already a thread on this? I'm too lazy to search for it though at the moment.

I use a lot of basil, cumin, garlic, oregano, and good old salt.

We use a lot of garlic, salt, pepper, and oregano in our everyday day meals.

as far as herbs, my favorites are probably basil and cilantro. I put them in everything imaginable. :)

We use alot of cilantro in our dishes. I know that they are not herbs but we also use alot of garlic and onions. They relly make a dish flavorable.

I asked this question somewhere else, I think, but speaking of herbs, does anyone know what they put on meat in restaurants to blacken it with? I love blackened chicked and steak, but I cannot seem to get anywhere near the flavor of the restaurants.

Garlic, salty, peppery, strong
Rosemary, woody, piney,earthy
Sage, peppery, pungent
Thyme, sweet, mild, earthy
basil, licorise (spelling)
Chives, mild onion flavor

I use loads of Rosemary, Thyme & Garlic.
Love Sweet Basil when it is fresh. Goes lovely with garden fresh tomatoes.
We raise lots of herbs and dry them.

:) And Jafo has beautiful herbs growing, I have seen them in a photo he posted here on a thread somewhere!

And in all of our talking back & forth thru this forum I have been inspired to plant my own herbs as well. The other day I used some of my fresh basil & I am excited to begin cooking with the rest of them real soon!

I wish basil was better when dried.
It tastes nothing like when its fresh.
Anyone have a Arp rosemary bush? I got a couple a few weeks ago because they are supposed to be able to stand the cold better.
