- 12 tbsp sugar
- 1 tbsp water
- 8 egg yolks
- 1/2 cup sugar
- 1 quart half and half
- pinch of salt
- Place the sugar and water in a small heavy sauce pan.
- Heat over medium heat until the mixture looks like a golden syrup.
- Pour this caramel into a shallow baking dish, and chill until firm.
- Beat together the 8 eggs yolks, and 1/2 cup sugar.
- Add 1 quart hot half and half (heated in a double boiler) and cook until sugar dissolves and mixture coats the back of a spoon.
- Pour over the chilled caramel.
- Set the dish in a pan of hot water and bake at 325 degrees F until the custard is set, about 1 to 1 1/2 hours.
- Cool and chill.
