Im new, Allergic Toddler- pumkin muffin troubleshooting

Hi!
My 16 month old is allergic to: Eggs, cows milk, goats milk, rice, peanut, almond, peaches, beef, carrots, green beans, banana, nectarines... I think thats it!
Anyway, she can have wheat and minimal soy (soy was a strong + and is now a - on her last bloodwork)

I just made her pumkin muffins and they are totally gooey in the middle... did I use too much pumkin?

here is is:

2 cups pumkin
1/2 cup applesauce
1/3 cup sugar
1.5 cups unbleached flour
1/4 tsp b.soda
1 tbsp + 2 tsp b. powder
1/2 cup coconut oil
I shook some cinnamon in as well.
I baked it at 350 for 30 min.

She really wants finger food and I am struggling to find her enough protein as well! Suggestions appreciated!
