Ingredients:
1 box Nilla Vanilla Wafers
1 pkg. midget-size foil lined cupcake papers
2 - 8 oz. pkg. cream cheese - softened
2 eggs
1/2 cup sugar
1 tsp. vanilla
1 tsp. lemon juice
1 tin cherry pie filling
Directions:
Combine cream cheese, eggs, sugar, vanilla and lemon juice. Beat well. Place one vanilla wafer in each cupcake paper. Fill with cream cheese filling. Bake at 350 degrees for 10 minutes. Let cool. Top with cherry pie filling.
Refrigerate. Keeps up to one week or more.
