Is everybody out of turkey yet?

I had a hamburger last night after days of bird leftovers- and the taste of beef was wonderful! Thursday night I'm invited out for Italian with friends and if the waiter even mentions a turkey special I think I'll kick his legs out from under him- HA! :rolleyes:
 
I got some roast beef and swiss from the deli. I do not want to see or hear turkey til Christmas when Jons Dads probably going to want me to cook another one lol. Jons Dad asked us for days if we wanted to come have leftovers. We were like uh gee..we just ate lol. He told Jon he gave up and froze his leftover turkey.

I've had Turkey for the last three days and I'm not tired of it yet. I love all that Thanksgiving food! Unfortunately I'm out of stuffing and cranberry sauce:( tonight I'm going to make potato cakes from left over mashed potatoes to serve with sausages. On Thursday I'm going to make turkey croquettes to go with left over gravy and serve along side a salad made with pomegranate seeds. I made the stock already from my carcass so I will be making turkey chili and then the last bit will go into turkey potpie with bisquit crust. Yum! I love leftovers!
 
Thanksgiving day I eat the turkey neck - every year. Then the next day I eat turkey, make stock out of the carcass and freeze in portions for future meals. So I don't get "turkeyed" out. LOL
 
I love the neck too, mama! I also love the "oysters" and of course the liver & gizzard- YUM! But I gotta be careful so I have some left to chop into my dressing...
 
My younger sister's 5 year old wanted to help cook the turkey this time. So she reaches into the turkey and pulls out the gizzard and stuff. She screams oh yuck and runs off to the bathroom with her clean hand over her mouth lol. She asks her Mom what they were when she comes back and tells her how gross they are. Her Mom tells her that they were going to give it to the outside dog anyway. She told her Mommy not to because they were to gross for even the doggies lol. Our little foodie in training has a bit of a weak stomach.

Oh I always eat the neck on Thanksgiving day before anyone gets there. It's the cooks treat. The oysters are also a big favorite I save those for the day after thanksgiving. I think that people who have never cooked a turkey don't even know about these treasures. Shhhhhh! don't tell!

I put my giblets in the gravy. I do have to share those. People will notice if they are missing. :eek:
