JAMAICAN BAKED CHICKEN
Serves 4
2 jalapeno peppers, halved and seeded
½ onion, halved
2 cloves garlic. minced
1 1/4" thick slice fresh ginger
1 tbsp. olive oil
1 tbsp. white wine vinegar
1 tsp. jerk seasoning
1 tsp. ground allspice
1/4 tsp. Salt
4 boneless, skinless chicken breast halves
½ mango, peeled and finely chopped
1 tbsp. chopped fresh cilantro
Preheat oven to 450* F. Spray 13 X 9-inch baking pan with vegetable spray; set aside.
Using your food processor, finely chop jalapeno peppers, onion, garlic, ginger, olive oil, vinegar, jerk seasoning, allspice and salt - scraping down the sides as needed.
Spread jalapeno mixture on both sides of chicken breasts; place in prepared baking dish. Bake about 25 minutes or until the internal temperature of the breasts is 160* F.
For plate presentation, place chicken on plate with chopped mango and garnish with cilantro.
