A week or so after the fact, here was our answer to non-alcoholic Mint Juleps while we watched the Derby on tv:
Ingredients:
4 or 5 mint sprigs
1 1/2 C sugar
2 C cold water
3/4 C lemon juice
1 1/2 quarts Gingerale
Lemon slices - thin, for garnish - optional
Directions:
Rinse the mint and discard stems. Place the sugar, water and lemon juice in a medium bowl. Mix and stir in the mint leaves. Allow to stand for 30 minutes. Fill a large pitcher with ice cubes and strain the liquid over the ice. Add the gingerale and lemon slices and serve chilled in tall, cold glasses. Yummy!!
