Very simple and very good -
Beat eggs; set aside.
Heat saute pan; add butter and oil; saute green and red bell pepper, and onion (red, white, yellow - any kind you want), diced ham. Pour beaten eggs over; cook, lifting to allow egg to run to bottom of pan; flip (Mama's good at this!), top with shredded sharp Cheddar, allowing flipped side to cook.
Slide onto plate folding in half.
Serve with homemade hash browns, homemade breakfast sausage and thick sliced hearty bread - toasted and topped with homemade jam.
To make your hash browns - grate your taters and fry in butter/oil combination allowing one side to crisp before turning. Season with salt and pepper.
To make your breakfast sausage - (best done ahead of time and can be frozen) -
5 pound medium ground pork butt
1 1/2 cups finely chopped onion
5 cloves pressed garlic
1/2 cup chopped parsley
1/4 cup sage
1 tablespoon marjoram
1 tablespoon cayenne
1 tablespoon thyme
1 tablespoon basil
1 1/2 tablespoons salt
1 tablespoon pepper
1/4 pound butter
Combine all ingredients, mix well and stuff into sheep casings, or
make into patties To cook, fry.
