Maple-Orange Sponge Custard

Ingredients:

1/2 C sugar
1/4 C maple syrup
1 tbls. unsalted butter
1 tbls. finely grated orange rind
2 egges, separated
3 tbls. all-purpose flour
1/3 C orange juice
1 C skimmed-milk, blended with 1/2 C non-fat dried powdered milk


Directions:

Preheat oven to 350 degrees.

Spray 4 custard cups with non-stick spray.

Cream sugar, syrup, butter and grated orange rind. Egg yolks. Stir in flour, alternate with orange juice and blended milk. In a separate bowl, beat egg whites until stiff peaks form, then fold into custard mixture. Pour into custard cups. Place cups in a large baking pan filled with one-inch hot water, and place in oven. Bake 45 minutes. Serve hot or cold. With baking, this separates into a sponge bottom and clear custard top. Yummy!
