Maple Pecan Bars
CRUST:
6 oz. butter (1 1/2 sticks)
1/2 c. sugar
1 egg yolk
1 1/2c. all-purpose flour
TOPPING:
3 eggs
3/4 c. sugar
3/4 c. pure maple syrup
1 1/2 c. chopped pecans
Preheat oven to 325 degrees.
FOR CRUST: Cream butter and sugar until well-blended. Add egg yolk and mix well. Add flour and mix just until dough is formed. Pat dough into a 9-inch by 13-inch pan, giving it a 1-inch border up the sides. Bake 15-18 minutes.
FOR TOPPING: Whisk together thoroughly sugar and eggs. Whisk in maple syrup. Scatter pecans over crust. Pour syrup mixture over all. Bake 25-30 minutes until set. Cool before cutting into bars.
