Mexican Food Recipe : Crawfish Enchiladas

Ingredients :
• 12 oz. package frozen crawfish tail meat
• 2 Tbs. butter
• 2 Tbs. all purpose flour
• 1 can chicken broth
• 1 can cream of onion soup
• 3/4 cup medium or hot picante sauce
• 8 oz. Monterey jack jalapeno or habanero cheese, grated
• 1 can chopped green chiles, drained
• 1/2 cup chopped onion
• 10 flour tortillas
How To Make :
1. Sauté crawfish meat in 1 T. butter for 5 minutes. Drain and cool.
2. Melt butter in medium saucepan. Add flour and stir with whisk for 2 minutes.
3. Whisk in chicken broth and cook until thickened.
4. Whisk in picante sauce and onion soup and then stir in green chiles.
5. Pour 1 cup of sauce into large baking dish, 9 x 13” or larger. Keep sauce warm.
6. On each flour tortilla, place some crawfish, grated cheese and a sprinkle of onion. Roll up and place seam side down in large baking dish.
7. Repeat until all are rolled.
8. Pour remaining sauce over enchiladas making sure they are all covered. Sprinkle any remaining sauce, cheese and onion on top.

I once had an Appetizer at the Santa Fe Fajita Grill that had refried beans with crawfish in it, it was heavy with garlic and topped with a melted white cheese, I can only say it was "to die for;)". The crawfish gave it a very good flavor. I tried making it at home my only problem was the frozen crawfish tasted over powering, I probably should have washed them better and cleaned them by soaking a little while in lemon juice & water
then rinsing them well.
I am definitely going to give these enchilada's a try!

I'm thinking this post is low-key spam, intended to drive us to the poster's webpage.

He/she has, as a first time poster, plastered it all over the web. I've seen it on at least four cooking sites.

So, it's either spam, or this person must really want the world to try the recipe.
 
:confused: I WON'T GO TO THE WEB AS I DO NOT CARE TO; BUT THOSE CRAWFISH SOUND SO GOOD:p DO NOT GET AS MANY HERE AS WHEN LIVING IN THE GULF COAST REGION OF ALABAMA!
BEING NEW TO THIS FORUM, I AM ECSTATIC AND REALLY GETTING SO MANY GREAT RECIPE IDEAS AND THIS CRAWFISH ONE JUST SHOOK MY MEMORY AND FOR THAT I AM GRATEFUL!:)
GUESS I LIKE TO JUST TAKE THE GOOD AND LEAVE THE REST BEHIND, "KNOW WHAT I MEAN VERN"!:eek: :) ;)
