I haven't been on here for a while, and the forum told me so!
I saw a couple of threads on Pillsbury bake-off recipes. I submitted this recipe a couple of years back - didn't hear anything from them
Restrictions (that I remember) were that the recipe had to contain 2 or 3 or more of a select list of their products. They also asked for detailed instructions.
Maybe I got a bit too detailed! (And, though I hate to admit it, perhaps the other recipes were just tastier and better than mine.)
I'd appreciate your comments - good or bad.
My recipe:
Cheesy Spinach Bites
Prep. Time: 15 minutes (Ready in 30 minutes)
1 (10-oz.) box Green Giant® Frozen Cut Leaf Spinach & Butter Sauce
5 oz. Sharp Cabot Vermont Cheddar Cheese
3 oz. Wisconsin Made Athenos Crumbled Feta Natural Cheese – Traditional flavor
½ teaspoon grated nutmeg.
1 (12-oz.) can Pillsbury® Golden Layers Flaky Biscuits
Heat oven to 400 degrees.
Cut X in center of spinach pouch, and place it, X down in a medium bowl. Microwave on High for 4 minutes.
While spinach is cooking, shred Cabot cheese onto a dinner plate.
Empty contents of spinach pouch into its bowl, and immediately add grated Cabot, Feta cheese and nutmeg. Mix well.
Open Golden Layers can, and remove biscuits. Using a sharp knife, cut each biscuit horizontally into 3 thin round pieces, and then in half, so that you have 6 half-moon pieces per biscuit. Make spinach sandwiches by spooning the spinach mixture between two half-moon pieces. Place on a greased cookie sheet, and bake on the center shelf of the oven for 10 - 15 minutes, or until the top crust is golden-brown.
Variations:
1) Spicy spinach bites: Omit the nutmeg, and add 1 Tablespoon curry powder and 10 drops of Tabasco sauce.
2) Sweet spinach bites: Omit the nutmeg, add 2 Tablespoons Russian dressing.
