Julia Child's perfected eggs & omelets techniques seem to have started a resurgence of egg cookery among the population! I've always eaten and loved eggs- and prepare many egg suppers to help ease my weekly grocery budget.
I remember working in hotels & resorts one of my all-time FAV duties was manning the Omelet Station in the buffet-line of Sunday Brunches. I've always had a gift for gab and swirling pans of eggs w/ one hand whilst filling w/ various ingredients and flipping the whole she-bang w/ the other all while carrying on 3 conversations at once was my forte!
I'll eat and enjoy any kind of omelet but my preferred, go-to choice is the simplest ever- onions sauteed until all caramelly and brown- and swiss cheese w/ a sprinkling of just 3 things: garlic salt, cayenne & nutmeg. Don't get any better for me!
