Ingredients:
1 8-oz. and 1 3-oz. package softened cream cheese
1 1/2 C softened butter
3 C sifted all-purpose flour
Ingredients for Filling:
2 eggs, slightly beaten
2 C light brown sugar
3 Tbls. butter, melted
1 tsp. vanilla
1/8 tsp. salt
3/4 C chopped pecans
Directions:
To prepare pastry, beat cream cheese and butter until well blended. Mix in flour. Roll into balls 1 1/2-inches in diameter. Press evenly into tart tins or cupcake tins and set aside. Preheat oven to 350 degrees.
To make filling, combine eggs, brown sugar, butter, vanilla and salt, mixing well. Sprinkle a few pecans in each pastry shell and cover with filling. Bake 30 minutes. These are the most lucious little bites you ever ate!!
