Pepper Steak

1 1/2 lbs beef top round or sirloin steak, cut into bite size strips (trim off any fat)
1/4 cup olive oil
1 cup water
1 large onion, halved, quartered and sliced
1/2 tsp garlic powder
1/4 tsp ground ginger
2 lge green peppers, cut into strips
1 tbs cornstarch
2 tsp sugar
3 tbs soy sauce
2 medium tomatoes, cut into wedges
1 pkg boil in bag rice (or rice for 4 servings)

Heat oil in large skillet or wok
Add beef. Cook, turning frequently, until brown, about 5 minutes. Stir in water, garlic salt and ginger. Heat to boiling, reduce heat. Cover and simmer 12 to 15 minutes for round steak, 5 to 8 minutes for sirloin. Add green pepper strips and onion strips during last 5 minutes of simmering. While beef simmers, cook rice as directed for 4 servings.
Blend cornstarch, sugar and soy sauce and stir into beef mixture. Cook, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute. Place tomato wedges onto beef mixture. Cover and cook over low heat just until tomatoes are heated through, about 3 minutes. Serve over the rice.
 
This looks like Chinese beef and vegetable stir fry!
I prefer yellow or red peppers to green ones as I find yellow or red peppers sweeter.

I guess anyone can be creative with Chinese stir fry!
