Picnic Basket Foods & Recipes

Break out your sunglasses......

Well now that it's summertime we will all be doing our picnicing, backpacking, and camping. I wonder what everyone likes to carry along for these occassions to be in the great outdoors?

I have so many favorites it is not funny but my ultimate favorite goes like this.........

Pack some cheese, grapes, crackers and a little something to drink and hit the road. Nothing real heavy for backpacking.

For a picnic or trip to the beach it has got to be more than that....usually Fried Chicken, potato chips, sodas and a sun visor!

For camping I love to make Hobo dinners at home before we leave then just throw them on the fire and let 'em cook when we get hungry. For breakfast we have got to have bacon, eggs and grits...nothing like a homecooked breakfast in the early morning in the great wide-open! Love Coleman stoves and Lanterns!

Here's my Hobo Dimmer Recipe (it's real simple:

Ground Round formed into a patties
Slices of potato (washed, peeled and sliced diagonally)
Carrot slices
Onion slices
Butter
Seasoning Salt of choice
Heavy-duty Alumninum Foil

Place one beef patty and pat of butter onto several layers of foil add veggies and season salt, fold into a tight packet sealing edges well. Place each packet into a water tight container and keep on ice until ready to use. When ready to cook place over coals and cook 30-40 min.s' until done.
The pkt's will swell up while cooking as they fill with steam, before eating poke a hole to allow steam to escape, carefully unwrap and enjoy eating your hobo meal! You can add any other fresh veggies of your choice (zucchini, green beans, etc)
 
Mama's picnic baskets - yeah - baskets - are filled with anything and everything I want to take - from finger foods to salads to pasta and meatballs to desserts - you name it - I find a way to take it!
