PINEAPPLE RICE
Serving Size: 6
3 cups cooked white rice
3 cups coarsely chopped fresh or canned pineapple ; drained (reserve)
6 tablespoons butter
3/4 cup light brown sugar ; firmly packed
3/4 cup pineapple juice with water to make measure
Place one third of rice in greased baking dish. Top with one third of pineapple, butter, and brown sugar. Repeat twice. Add pineapple juice and bake covered in a preheated 350* F. oven for 30 minutes.
