Pizza and Spinach Pies

As always my gracious wife made the dough, and I did everything else

Here we have Italian spinach pies. There has been a lot of confusion any time I try to explain these to people.
Here I have 2 pounds of cooked spinach, tossed with olive oil, crushed red pepper, fresh cracked black pepper, crushed garlic, pecorino romano, and parmesan cheeses.
You take this mixture and put it onto small pieces of dough and fold it up making like a pocket with filling inside.

This is what they look like all done. I bake these at 450º until golden brown

And now, the pinnacle of tonights cooking is something I've wanted to try for a long time. A BBQ pizza.
I had some pulled pork left from the last pork shoulder I smoked. I covered the dough in a mix of my own BBQ sauce and some rub, then piled on quesadilla cheese, the pulled pork, some mexican corn, and more cheese

Oh my gosh looks delicious all of it!!! That Pizza WOW Rick, how in the world did you dream that one up? Wonderful job on all! Now I just wish I could taste it:p Those spinach pies look too yummy, they remind me of Mream's Yami-Yami's.
 
The idea for the pizza just kinda came to me Cathy. I've had BBQ pizza before but it always had chicken. When I woke up early this morning ;) I thought why couldn't I use pulled pork. The corn was a last minute thought while I was shopping for spinach. I seriousley impressed myself with that one
