A favorite breakfast dish in South Carolina, skillet cake is somewhat like Yorkshire Pudding, baked in a cast-iron skillet and puffed and golden. It is usually served with applesauce and brown sugar.
Ingredients:
1/4 C unsalted butter
3 eggs
3/4 C milk
2 tbls. orange juice
3/4 C all-purpose flour
pinch of freshly grated nutmeg
powdered sugar
Directions:
Preheat oven to 425 degrees.
Place the butter in a heavy 2 qt. pan or skillet not more than 3 inches deep.
Place in oven until butter melts.
Meanwhile, beat eggs in a large bowl until light yellow in color. Beat in the milk, orange juice, flour and nutmeg until smooth.
Swirl the melted butter over the bottom and sides of the pan. Pour in the batter and return to the oven. Bake until golden brown and puffed, about 25 minutes. Dust with powdered sugar and serve immediately.
