Puffed Apple Pancake

1/2 stick (4 tablespoons) unsalted butter, melted
1 large apple (your favorite type), peeled, cored, and thinly sliced
1/4 cup chopped pecans or walnuts
4 large eggs
1 cup whole milk
2/3 cup flour
2 tablespoons sugar
1 teaspoon vanilla (or almond) extract
Pinch of cinnamon
Pinch of salt
Nonstick cooking spray
2 tablespoons brown sugar
Maple syrup

Heat oven to 425 degrees. Pour butter into a pie plate, 9-by-9-inch baking dish, or 9-inch ovenproof frying pan. Lay apple slices and nuts in pan and bake about 5 minutes, or until apples begin to soften and nuts are lightly toasted. Using a standing or electric mixer, beat eggs, milk, flour, sugar, vanilla, cinnamon, and salt together. Remove dish from oven. Mist edges of dish with nonstick cooking spray. Pour batter into dish and sprinkle with brown sugar. Bake about 20 minutes, or until edges puff and brown and center is set. Serve with maple syrup while hot.
 
hi that is a good recipe for breakfast , i also make it often. the good thing i like in Puffed Apple Pancake is that it takes lesser time than other fruit stuffs. hope people here will also enjoy this one !!!! Salute from my side ...
 
Hmm great idea. I was always looking for good recipes for breakfast. i kind of have less ideas there than in case of lunch or dinner.

I added an extra apple, extra egg, pinch of cardamom and nutmeg, and 1/8th tsp. of baking powder. I also used Sugar in the Raw, since it's the only type of sugar we keep. The "pancake" puffed beautifully and fell almost immediately after out of the oven. It was a delightful change from our regular pancakes. I think next time I'll add toasted pecans or sprinkle pecans across the top of the batter.
