Red Lobster Batter−Fried Shrimp

1 1/2 pounds shrimp, peeled and deveined
1/2 cup oil
1 egg, beaten
1 cup all−purpose flour
1/2 cup milk
3/4 teaspoon seasoned salt
1/4 teaspoon salt
Oil for deep frying

Preheat oil to 350F. Combine 1/2 cup oil and egg; beat well. Add remaining ingredients except oil for frying and stir until well blended.
Dip shrimp into batter to coat. Drop shrimp into hot oil and fry
for 30−60 seconds or until golden brown. Remove with slotted spoon; drain on paper towel.
 
Sounds nice.

I like cod cooked in a yeast and beer batter.

My husband does it this way.

1/2 oz fresh yeast
About half a pint of beer
8oz flour
1 tsp salt
Flour for dusting fish
Oil for deep-frying (we used to use dripping when I was a child)

Method
Dissolve the yeast with a little of the beer
Once it has mixed to a paste, slowly add the rest of the beer, stirring continuously Sieve the flour & salt into a bowl and make a well in the centre
Pour in the beer & yeast mix & whisk into a batter
Leave covered for about an hour at room temp before using
Dust the cod with flour, coat with the beer batter & fry until golden
 
Wow Keziah that beer batter sounds good! I love fried Cod it is my very favorite fish of all!!!
I simply clean my Cod filets and sprinkle them with a little seasoned salt, dredge in flour and pan fry them in a small amount of melted butter until nicely browned. DELICIOUS!!!! FAST & OH SO EASY!!!! 10 minutes from start to finish!
