Among my fav proteins are beef, chicken and SALMON.
Although I enjoy a thousand different salmon preparations, I have two particular (EZ!) favs:
1.) brush a 'glaze' of equal parts yellow OR dijon mustard/maple syrup w/ a sprinkle of red pepper flakes on fillets as they grill or bake.
2.) make a glaze out of a jar of store-bought peach preseveres melted into a pan of tons of caramelized onion. Add a dash of soy sauce, and finger of ginger and brush onto grilling salmon fillets or steaks- reserving some for a sauceboat at the table.
