Thinking about you guys in the U S I thought this would be a good way to use up leftovers (If there are any LOL)
Savory Hand Pies
Southern Living magazine - Nov 2010
1 C finely chopped roasted turkey
3/4 C mashed potatoes
1/2 pkg (8oz) cream cheese - softened
1/2 C cut green beans - cooked
1 carrot - grated
2 Tbsp chopped fresh parsley (I'm going to use dried)
Salt & Pepper - to taste
1 1/2 (14.1 oz) pkgs of refrigerated pie dough - going to make my own!
1 lg egg - beaten
poppy seeds - optional - think sesame seeds would be good too!
Turkey Gravy - warmed
Stir together first 6 ingredients, then season with S&P.
Preheat oven to 400. Unroll each piecrust & gently roll out to 12" circles. Cut each crust into 6 circles using a 4" round cutter. Place approx 3 Tbsp of turkey mixture just below center of each dough circle. Fold dough over filling, pressing & folding edges to seal.
Arrange pies on a lightly greased baking sheet. Brush with egg & spinkle with seeds if desired. Bake at 400 for 18-20 minutes or until golden brown. Serve with warm gravy.
Note: Unbaked pies can be frozen up to 1 month. Bake frozen pies 30-32 minutes or until golden brown.
Doesn't this sound like a great way to use up some of the leftovers in a neat & creative way?!?!
